We made this Edamame, Pea and Egg smash on brown sourdough bread last weekend. Sinéad saw it on the Channel 4 TV Show “Protein: Everything you need to know”, with Gemma Atkinson. Have a look for it on catch up. It’s really yummy, and a good alternative to avocado.
Even our kids ate it and they can be fussy.
It’s a good breakfast but we had it for lunch.

Edamame, Pea and Egg Smash
- 1 cup frozen peas
- 1 cup frozen shelled edamame
- 1/3 cup tahini
- 1 tbsp nutritional yeast
- Zest half lemon
- Juice of 1 lemon
- Pinch of tsp salt
- 2 tbsps olive oil
- 2 eggs
Method
- Boil the Edamame beans and peas in a pan for 3 minutes to soften
- Add all the ingredients to a food processor and blend until smooth and spreadable.
- Taste for salt and acidity and adjust to taste, adding more lemon or salt if needed.
- Boil 2 eggs for 5 minutes
- Spread the pea mix on brown sourdough toast and top with a scouped out boiled egg, cut up roughly egg.
- Optional – Sprinkle Spring onions and chili flakes or fresh coriander, and/or a drizzle of olive oil.
- Enjoy!
