Edamame, Pea and Egg Smash on Toast Recipe

We made this Edamame, Pea and Egg smash on brown sourdough bread last weekend. Sinéad saw it on the Channel 4 TV Show “Protein: Everything you need to know”, with Gemma Atkinson. Have a look for it on catch up. It’s really yummy, and a good alternative to avocado.
Even our kids ate it and they can be fussy.
It’s a good breakfast but we had it for lunch.

Edamame, Pea and Egg Smash

  • 1 cup frozen peas
  • 1 cup frozen shelled edamame
  • 1/3 cup tahini
  • 1 tbsp nutritional yeast
  • Zest half lemon
  • Juice of 1 lemon
  • Pinch of tsp salt
  • 2 tbsps olive oil
  • 2 eggs

Method

  1. Boil the Edamame beans and peas in a pan for 3 minutes to soften
  2. Add all the ingredients to a food processor and blend until smooth and spreadable.
  3. Taste for salt and acidity and adjust to taste, adding more lemon or salt if needed.
  4. Boil 2 eggs for 5 minutes
  5. Spread the pea mix on brown sourdough toast and top with a scouped out boiled egg, cut up roughly egg.
  6. Optional – Sprinkle Spring onions and chili flakes or fresh coriander, and/or a drizzle of olive oil.
  7. Enjoy!
